The story of the macaron begins in the kitchens of 16th-century France, where the almond meringue cookie first took shape.

It wasn't until the 20th century that Pierre Desfontaines, the grandson of the Ladurée bakery's founder, had the ingenious idea to sandwich these delicate shells with a flavorful filling. Thus, the modern macaron as we know it was born.

The magic of macarons lies in their unique baking method. The cookies are left to rest before being baked, forming a thin shell that gives them their distinctive texture.

 

Limitless Flavor Combinations

As the macaron evolved, so did its flavor profile. What began as a simple almond delight has transformed into an expansive array of tastes, from classic vanilla and chocolate to daring combinations like passionfruit and rose.

 

What are your favorite flavors?

I had some wonderful flavor combinations like black sesame paired with matcha cream, lotus biscoff paired with dulce de leche cream, caramel paired with pistachio cream and more.  

The possibilities are truly endless.
